Breaded Crispy Baked Pickerel (Walleye) with Roasted Vegetables

Ingredients

  • Pickerel (Walleye) Fillet

  • Plain Breadcrumbs

  • Flour

  • Egg

  • Asparagus

  • Carrots

  • Onions

  • Cajun Seasoning

  • Lemon

  • Olive Oil

  • Salt and Pepper, to taste


Preparation

Preheat oven to 400 degrees. Chop Carrots, Onions and prepare Asparagus and add to a baking dish, top with Olive Oil, Cajun Seasoning, and Salt and Pepper, to taste. Place in oven to bake. While the vegetables are cooking pat the Pickerel dry, lightly salt and place in fridge to dry while preparing the dredge. Beat Egg in a flat dish as the egg wash. Add Flour to a plate and season heavily with Cajun Spice, Salt and Pepper. Place Breadcrumbs on a flat dish. Dredge Pickerel in the Flour mixture, then into the Egg Wash, before coating heavily with Breadcrumbs. Grease a flat metal pan with Olive Oil and lay down Breaded Pickerel. Place in the oven and cook for 10-15 minutes, flipping halfway through. Once you've reached your desired doneness, finish with a squeeze of Lemon. Plate with vegetables and Enjoy!
