Fire-Roasted Arctic Char with Endive, Capers, Dill and Lemon Tacos

Ingredients
Arctic Char
Endives
Garlic
Lemon
Dill
Capers
Vegetables of Choice
Tortilla
Olive Oil
Salt and Pepper,
Seasoning of Choice
Preparation
Prepare a small to medium size fire in a safe area, designated for campfires. While the fire gets to a consistent temperature, prepare the Arctic Char and Vegetables by coating with Olive Oil, Seasonings of choice, and Salt and Pepper. Set to roast on the fire until desired doneness, usually 4-8 minutes. While the Char and Vegetables are cooking, slice up the Endives, Dill, and Lemon. Once the Char and Vegetables are done, remove from the fire and top with a squeeze of fresh Lemon and a spoonful of Capers with brine. Prepare each taco by layering roasted Char and Vegetables, fresh Endive, Capers, and a sprig of Dill on a tortilla. Serve fire-side and Enjoy!
